The Oatmeal Pumpkin Spice Cookies are a
nutritious and satisfying dessert or snack. Nutritionally they provide
significant amounts of important nutrients that are difficult to get in
sufficient quantities in the typical diet. One cookie provides an
impressive amount of dietary fiber, primarily soluble fiber, that can
lower blood cholesterol and blood sugar levels. They are an excellent
source of vitamin A, iron and thiamin, making these cookies particularly
